As it turns out, the Texas man had an infection that caused “Auto-Brewery Syndrome,” which was the result of brewer’s yeast in the subject’s gut causing his body to take any food heavy in starch, like pasta or bagels, and turn the food’s sugars into ethanol.

You have to consume alcohol to commit the offense, not just make it in your stomach brewery. So, this illness might be used to create a reasonable doubt about that element. Seems better than "the twinkies made me do it" defense.
