Conviction Affirmed?
Okay. Defedant is convicted. Appeals and gets an appeals bond. (Yes, it was appropriate.) Conviction is affirmed.

Who picks the guy up so he can begin serving his time?

Once the mandate isssues, the clerk of the court is supposed to issue a committment so that the defendant can be arrested. Tex. Code Crim. Proc. Ann. art. 42.09, Sec.2. Our clerk's office usually issues a capias--I don't know that they know what a committment is or if they have a form. Often, one can arrange for the defendant to surrender him or herself to the sheriff. We try to track these cases to ensure that the defendants are indeed picked up. We had a problem some time back with the clerk's office just drop filing the mandates and leaving the defendants on the street.
