A trustee from the jail is threatening suit for a back injury incurred while moving a refrigerator. I seem to recall that there are some defenses built in for these suits, but do not remember them.

All I have so far is the letter from counsel outlining the cause of the injury, claiming a severe, debilitating injury and so forth. (Rumor is that if the DA would drop charges, the back would improve dramatically.......)

Perhaps you are thinking of CCP Art. 42.20, "Immunities"?
